Korma (Mutton or Chicken Korma)

Korma is a rich and aromatic curry made with meat (usually chicken or mutton), yogurt, nuts, and fragrant spices. It’s a luxurious dish, often served on special occasions.

Ingredients:

  • 500 g mutton or chicken, cut into pieces
  • 1 large onion, sliced
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • 1/4 cup yogurt
  • 1/4 cup ground almonds or cashews
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1 tsp garam masala
  • 2 tbsp ghee or oil
  • Salt to taste

Instructions:

  1. Heat ghee in a pot and sauté onions until golden brown.
  2. Add ginger-garlic paste and cook for 1-2 minutes.
  3. Add mutton or chicken pieces and cook until they are browned.
  4. Stir in tomatoes, yogurt, coriander powder, cumin, turmeric, and salt.
  5. Cook until the tomatoes soften and the oil begins to separate from the curry.
  6. Add ground almonds or cashews and enough water to make a rich gravy.
  7. Simmer until the meat is tender and the gravy thickens.
  8. Sprinkle garam masala and cook for 5 more minutes.
  9. Serve with naan or rice.
